Pesto is expensive to buy, but it is so versatile and really does transform dishes into something aromatic and delicious. We will make a huge batch of this and keep it in the fridge to serve over the busy Christmas week. Think left over ham sandwiches the day after Christmas, smothered in delicious pesto, pesto on poached eggs and left over ham for breakfast, and even pesto with crackers and wine when the neighbours pop in unexpectedly to say Merry Christmas. It is delicious served alongside the following recipe too.
